Recipe Veal Scallopini and Mushroom Roulette

Veal Scallopini and Mushroom Roulette:

Ingredients:

1) Veal scallopini - 2 slices
2) Mushrooms, crimini brown - 4
3) Mushrooms, Shiitake - 6 to 8
4) Onion - 1 slice
5) Anaheim pepper - 1/2
6) Garlic - 3 cloves
7) Half n half - 1/8 cup
8) Flour - 1/8 cup
9) Beef Better Than Bouillon - 1/2 tspn.
10) Farro Perlato, dry - 1/4 cup
11) Thyme - 2 tspns.


Procedure:

-- Preparation --

1) Boil the farro perlato to al dente softness and set aside.
2) Finely dice the crimini mushrooms, garlic, onion and Anaheim pepper.
3) Saute' the diced vegetables with 1 tspn. thyme and set aside.
4) Preheat the oven to 375F.

-- Cook and Serve --

5) Lay flat the veal scallopini, overlapping the 2 slices.
6) Layer the sauted vegetables on the scallopini.
7) Roll up the scallopini into a roulette.
8) Prepare a shallow baking pan with a rack.
9) Place the veal roulette and shiitake mushrooms on the rack.
10) Bake for 30 minutes.
11) Cover a serving plate with farro perlato.
12) Lay the veal roulette over the farro perlato.
13) Set the shiitake mushrooms along the sides of the roulette.
14) Pour any juices into a pot with BTB, half n half and flour.
15) Add thyme and cook while stirring to generate a gravy.
16) Cover the roulette and farro perlato with gravy.
17) Serve.
