I’m not much of a fan of lamb, so I figured I’d try out a vegan substitute. It turned out quite well - Beyond does make a very reasonable facsimile.

Ingredients:

1 lb Beyond meat (I used the burger patties and just crumbled them up)
1/2 red onion, finely minced
4 cloves garlic, finely minced
1 tbsp fresh mint, finely minced
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp ground cinnamon
Good grind each of salt & black pepper

Method:

Add everything together into a large bowl and mix well using your hands. Form the mixture into 6 cylinders. The Beyond meat is quite sticky, so run your hands under cold water to stop the mixture from sticking to your hands.

Place the cylinders in a parchment-lined baking sheet and bake at 400 degrees for 10-12 minutes, until they are firm. If you’d like, you can then transfer them to a grill for 1-2 minutes to brown the outside a bit if you’d like (I couldn’t be bothered).

Serve with tzatziki and whatever other accompaniments you like - I served it with some tabbouleh, sliced cucumber, and hummus.
