It is supposed to be a healthy recipe, the 'pinch of nom' books are aimed at eating tasty and healthier.

Hmm - I slice the onions really thinly on a mandolin. Then there is no need to fry them at all (calories and time saved). They will cook on top of the cheese (as they would on a pizza). Their recipe isn't really low calorie or particularly 'healthy' (whatever that means!), as far as I can see.
