This is simple to do with sweetcorn.
Basically a beetroot and sweetcorn gratin.

That's like a take on my favorite Korean Sides, Cheese Corn. Sounds amazing!

I like to grill it on the cob, then slice off the cob. Cilantro, Cotija, tajin, red onion, s&p, some oil and a splash of red wine vinegar.
