Sweet corn (Zea mays'
convar. saccharata var. rugosa; also called sugar corn and pole corn) is a variety of maize grown for human consumption with a high sugar content. Sweet corn is the result of a naturally occurring recessive mutation in the genes which control conversion of sugar to starch inside the endosperm of the corn kernel. Unlike field corn varieties grown for animal fodder, which are harvested when the kernels are dry and mature (dent stage), sweet corn is picked when immature (milk stage) and prepared and eaten as a vegetable, rather than a grain. Since the process of maturation involves converting sugar to starch, sweet corn stores poorly and must be eaten fresh, canned, or frozen, before the kernels become tough and starchy.
It is one of the six major types of corn, the others being dent corn, flint corn, pod corn, popcorn, and flour corn.
This is another of our old favourites from the long since deceased BBC Vegetarian Good food magazine which ceased publication back in the 90's!
If you are making a dairy free version then you have a couple of options but by far the best tasting is to switch to homemade cashew nut milk and...
Fried Cabbage & Corn with Bacon
Makes 4 servings
4 to 5 oz. bacon (thick or thinly sliced), cut cross-wise into 1/2-inch pieces
2 TB butter
1 cup thinly sliced spring or sweet summer onions, plus some of the green if using spring onions (reserve the green portion separately)
This was some of the most moist and tender cornbread I've ever had. Since I used my basic go to cornbread recipe, I have to assume it was the addition of the cheese.
Makes 7-8 cupcake size or two 6-inch pie pan servings
1-1/2 Tbsp sugar (optional)
3 Tbsp butter, room temperature
1/2 tsp salt...
Made this yesterday. It turned out great. Definitely will add it to my meal rotations.
Note: The original recipe calls for zucchini and tomato but I didn't add them which is why they are not listed.
3 pounds chicken legs and thighs (about 8 pieces)
1/2 cup butter, divided
Cheesy Grits Casserole
In the spirit of, although not the actuality (I'll never have her true recipe) Grandmother T's southern grits casserole.
My paternal grandmother passed away late winter of 1983, and Dad hated grits, oatmeal, cream of wheat, so we never had these at home. Okay...

An imitation of Corn Maque Choux (mock shoe) is served as a side in numerous restaurants in the south. It is made with frozen or canned corn. It is just OK. I understand why it is not served in restaurants, corn is seasonal and the process is labor intensive. I am kicking myself for not...

I think I'm safe in saying that this is a unique recipe. I searched and couldn't find any other involtini using this combination of ingredients. It was improvisation really - I had an aubergine that needed using up and corn happened to be the recipe challenge ingredient. I enjoy making involtini...
We haven't made this in almost 12 years and I don't know why because we saved the newspaper page it was on so we must have liked it. I guess it got lost in our never ending experiments with new recipes. I found it when looking for the Chipotle chicken recipe for JASOH1 , so thanks for asking...
