sweetcorn/corn

Sweet corn (Zea mays'
convar. saccharata var. rugosa; also called sugar corn and pole corn) is a variety of maize grown for human consumption with a high sugar content. Sweet corn is the result of a naturally occurring recessive mutation in the genes which control conversion of sugar to starch inside the endosperm of the corn kernel. Unlike field corn varieties grown for animal fodder, which are harvested when the kernels are dry and mature (dent stage), sweet corn is picked when immature (milk stage) and prepared and eaten as a vegetable, rather than a grain. Since the process of maturation involves converting sugar to starch, sweet corn stores poorly and must be eaten fresh, canned, or frozen, before the kernels become tough and starchy.
It is one of the six major types of corn, the others being dent corn, flint corn, pod corn, popcorn, and flour corn.

    Corn Shucking Shortcut

I saw this on Pinterest, and decided to give it a try. Instead of peeling the corn one leaf at a time, cut off the end of it: The key is to cut above where the leaves attach. If you haven’t cut far enough down, you might have to slice the end off. Then, peeling becomes pretty easy...

    Grits

As a Brit, grits are a mystery to me. Its not something we have in the UK. In fact, the name itself sounds rather unappetising (as if it might be gritty). But I know it is popular and traditional in parts of the U.S. How do grits differ from polenta? Is hominy (a much nicer word) the same as...

    Recipe Corn fritters

Or patties, this is my take on it. 1 can creamed corn approx 350gms. Tablespoon flour 1 chopped onion 2 slices bacon chopped 1 or 2 eggs. I buy free range large, I would only use 1 of these. They are big. Mix and fry in a pan. Serve with a splash of Worcester sauce. Yummy. Russ

    Recipe Corn and Crab Chowder

The corn and crab complement each other in this chowder (chowda for New Englanders). I've seen many "crab" dishes where the crab gets lost in the other ingredients. That, to me is a waste of expensive jumbo lump crab meat. The use of celery, green bell pepper and onion (trinity) hints of Creole...

    Freezing Sweetcorn

This morning we were given 30 freshly harvested ears of corn. We shall pass some on to neighbours/friends but I thought I would try freezing some. I stripped half a dozen and blanched them in boiling water for 7 minutes (after the water re-boiled). They are now bagged and will make their way...

    Cooking Corn on the Cob

I want to thank the person who told us about a really easy way of cooking corn on the cob by actually putting the cob into the microwave exactly as you buy it, without peeling it or pulling off all those stringy bits. It has completely changed the way I cook corn on the cob and made it so much...

    Recipe Corn Chowder

I made this using a New York Times Cooking recipe as a basis, but assembled it with expiring food from my refrigerator. I had boiled the corn 3 days earlier; the potatoes were starting to form sprouts because they'd been on the shelf a bit too long. I would have used half-and-half, but that had...

    Recipe Spinach Invasion

I made up this recipe probably 20 years ago and have never shared it before. It's also the first time I've measured everything. It's very easy to make. Corn has never featured prominently in my kitchen and often when I see a popular corn pie on a lunch table I don't even taste it.
