Weekly Menu (2025)

I’m having spring rolls with just fresh herbs, cucumbers and carrots are for crunch. No frying necessary. However I need to do a peanut sauce, a proper one for dipping.
For soup, I will have tomato soup with egg drops, newish recipe for me. No noodles required.

Do you make the spring rolls with rice paper?
 
I also decided to not go to Korean store to get ssamjang, too much of a bother, I will try to concoct something out of whatever I have, I think I bought a red chili sauce by mistake.
I also need to make some kimchi-ish without going to the shop, I’m tired of running around getting this and that special ingredients.
So sliced Persian cucumbers in some kind sauce, pretend its a dish from Korea. Need more googling.

Here is my tomato soup, I decided last minute, what the heck I have it rice noodles.

Both my husband said lunch was tasty. It was very quiet lunch, everybody was busy chewing the carrots and cucumbers, not a word coming out of them, lol.

Today we had lunch a bit early, we have a full schedule and my daughter has an interview in the afternoon, she has to prepare for it.
