Weekly menu (2026)

Samosas are done, I put a bit of egg wash to help seal the skin, they are flat, in a funny shape but they will taste good, will be served with ketchup.
Not trying to hijack your weekly menu, which I think is absolutely admirable. Using up things from the fridge/freezer is very important, and occasionally, we all forget about it.
Next time you make samosas, try this: Tamarind (Imli) Chutney It's definitely my favourite for samosas.
 
My husband is sick so my daughter is going to Target this afternoon, I asked her to get us some sausages, comfort food for my husband. We have potatoes and baked beans. I might do some cabbage soup so he can get some hot liquid.

The like is for the menu, which sounds delicious - sorry your husband is under the weather.
 
My husband is definitely getting the worst over, yesterday he had to take a Tylenol, headache, anyway from what I’ve read online a lot of people are getting this latest strain of flu, even for people who had flu and COVID shots, that didn’t spare them. My husband did get both last fall.

Anyway, today I looked at the squash and the carrot from the freezer they don’t look good enough to roast, lot of wetness, so I decided to throw them in a crockpot with a huge pork shoulder bone for soup. I will add some white beans and kale from my garden.
Lunch will be sausages, mashed potatoes and beans. I will also do a garden salad with beetroots, onions, and garbanzo beans.
 
We went out shopping because my husband’s favorite ice cream was on sale.
So of course while there I get other stuff that’s not planned.
Rapini and ham, ham was half off and I just saw a video from Jacques Pepin, rapini, ham, and white beans. That will be my dish for Friday if I toss in a bit of pasta. My daughter doesn’t eat a lot of pasta.
I also bought some anchovies, so Sunday menu will be Spaghetti a la Natalina. I will throw in a few shrimp for protein. I do have walnuts and capers for this dish. No black olives though, I will get some when I go to Sprouts tomorrow. I desperately need some sea salt and olive oil.
 
I went to Costco today and bought some white fish, cod, so Saturday lunch, cod in tomato sauce, capers, garlic, onions, and will be served with spaghetti.
Sunday, we will be having pizza.
 
I also bought some baby back ribs, plan to do a bbq one day, and perhaps make a new bbq sauce with coffee for a change. 3 pieces of baby back ribs. The problem with ribs is once you put the leftover in the freezer, it can be dried. So I might have to rejuvenate it with some beans and slow cook them.
I have some green cabbage so I will make some coleslaw to go with the ribs. Not sure which day to make the BBQ. Maybe Tuesday?
Sunday or Saturday i plan to go to Zion market to get some King Oysters, they are on sale, and they last a long time in my fridge, my daughter likes to eat this type of mushroom, so many meals can be made. I plan to make vegetarian scallops out of the King Oysters, maybe some dumplings. In fact I asked a Korean shopper there what would she do with the mushrooms, that’s exactly what she said she would do. So more research to be done.

Weekly menu is changing again.
My husband likes to eat the fish with something else, not bread, he has it all the time, not pasta either. So I found 2 potatoes, not the Russet type, lower glycemic index than Russet potatoes, you can eat the skin with this type, so I’m going to nuke them in the microwave and call it a day.
My husband is getting much better, he’s out there redoing the sprinklers so his raspberries will get some water.

I discovered I have a big bowl of turkey jelly, I need to make something out of it. Either throw in some mushrooms and add some pasta or cook it with some potatoes, still researching for recipes.
But I’m not thinking of making soup, we have been eating a lot of soup lately.
