Yeah - that is used in commercially made bread but this was a recipe which karadekoolaid made from the NYT. Isn't It unlikely that they would have required it as an ingredient for home baking?

Nope - absolutely not. The only chemicals I ever use in cooking are sodium bicarbonate, and sodium chloride.
I don't know why it lasts so long. Perhaps because it doesn't have any additives or chemicals in it.
It makes the most divine toast as well!

That’s definitely true of homemade bread - supermarket bread is so soft, it’s nearly impossible to get it crispy!
