What are you baking today (2025)?

Now I have to really practice my scoring. I usually just go at the loaf like Jack the Ripper (Jack the Baker?), but I need to be a little more practiced.

A little bit of an ear forming there, though.

Generally, the bread rarely behaves the way I want it to. I’m mainly scoring to get better spring once it hits the oven, but like with this loaf, it underperforms a little.

Then again, I watch a lot of videos of professional bakers, and their round loaves look too flat to me too, so maybe I need to deflate my expectations - I want a boule that’s shaped like a soccer ball with a slightly flat bottom.

I've used this to make them a bit "taller". It's a clay bottom from Home Depot that goes with those plant pots in the gardening section. That bit of lip on the bottom forced it to go up.

Do you have a photo of the baked bread crumb? The risen dough looks lovely.
Thank you but no. These are going to customers. I can tell you it's going to look like regular store bought sandwich bread since to form it into 6 mini loaves it's getting handled too much for a large crumb. I'll make some on Wednesday without all the handling and get a pic for you. 👍
