What's wrong with your scoring?Thanks!
Now I have to really practice my scoring. I usually just go at the loaf like Jack the Ripper (Jack the Baker?), but I need to be a little more practiced.
A little bit of an ear forming there, though.

Generally, the bread rarely behaves the way I want it to. I’m mainly scoring to get better spring once it hits the oven, but like with this loaf, it underperforms a little. What's wrong with your scoring?

Then again, I watch a lot of videos of professional bakers, and their round loaves look too flat to me too, so maybe I need to deflate my expectations - I want a boule that’s shaped like a soccer ball with a slightly flat bottom.
Funny you should say that 'cos one of my favourite bread chefs is Sourdough Loaf for Beginners — Bake with Jack.I usually just go at the loaf like Jack the Ripper (Jack the Baker?), but I need to be a little more practiced.
I’ve seen some of his videos, and apart from his baking, his accent is…well, all I can say is, all I can hear when I listen to him is that shady mob character Michael Palin used to do so well on Monty Python.Funny you should say that 'cos one of my favourite bread chefs is Sourdough Loaf for Beginners — Bake with Jack.
Here he is 'slashing':

I used my sourdough starter this go around to bake some mini baguettes for the Groomer Girls. I let it rise on the counter overnight and it really outperformed any commercial yeast.View attachment 134967View attachment 134968
Thank you but no. These are going to customers. I can tell you it's going to look like regular store bought sandwich bread since to form it into 6 mini loaves it's getting handled too much for a large crumb. I'll make some on Wednesday without all the handling and get a pic for you.Do you have a photo of the baked bread crumb? The risen dough looks lovely.
