Tofu in a vegetable soup thing. Super low calories...

I cooked this on Sunday but forgot to post it. Mediterranean vegetable tart. You start off with a blind-baked pastry shell, smear the bottom with thick tomato sauce, pile some grilled veg (in this case, courgettes, onions, peppers, aubergines, garlic, tomatoes) on top, decorate with olives and feta cheese, then bake.
Delish with a nice crispy salad!

Grilled/Toasted Turkey, Sharp Provolone & Pesto on Italian Bread with a side of Potato Chips/Crisps.
To wash it all down, something I rarely drink: Lipton/Brisk Raspberry Iced Tea - far more sugar than I like to have but ...
 
I had 1 leftover Cordon Bleu from dinner last night plus some mashed potatoes, so I made a mashed potato pancake, melted a slice of cheese on it, and heated up two thinly sliced rounds of Cordon Bleu n the toaster oven on parchment paper. When they were warmed, I put it on 1 more minute with the mustard cream sauce on top and then served it over the potato pancake with 2 over-medium fried eggs over the top of it. That was DH's breakfast and he absolutely loved it!!!
 
DD and I went to the Longhorn Steakhouse Restaurant. Can't remember what day. I thought I posted the pictures, but obviously not.

I had a Salad with blue cheese dressing, bread, and butter to start. I had a baked potato (butter and sour cream) with dinner. We shared the rest.

Ribs, Filet Mignon, Fire-grilled sweet corn topped with house made crema and seasoned Parmesan cheese (cut off the cob to share).
