What did you cook or eat today: August 2025?

I've been striving to ensure that every day this week has been an easy-peasy kinda dinner for us two, today was no exception.

Hawaii-Style Beef Stew and that ever present steamed White Rice.
I made a big batch of this back last month, divvied it up for the deep freezer for later, like now, when I just want to eat something comforting and ONO (that's Hawaiian for delicious).
This batch came out really well, even if I do say so myself. Very Beefy flavored, hearty, filling and hit that spot, right there!

My OH came home with cornbread sourdough or is it corn sourdough? No idea. It actually has pieces of corn in it. So using our homegrown squash to make squash, sweet potato and sweetcorn chowder seemed like a plan. I just wish he'd actually opened the recipe book and followed the recipe.

Any how, I've almost managed to rescue it.
 
Last night, SIL roasted cherry tomatoes in olive oil along with some basil, and threw a brick of feta in there for good measure

When that was done, she boiled some angel hair pasta, stirred the tomatoes and feta together, then dressed the pasta with the cheesy sauce.
I've done this recipe before! It was delicious and the heartburn from it was legendary.
 
Went down the shore with DD yesterday. Spent the day on the Seaside Heights boardwalk. No beach (We really don't like ocean water, sand, cracked shells, critters).
Rode the Ferris wheel and the carousel. Browsed the shops and spent way too much money (on shirts and trinkets) and the arcades. Did manage to spend (waste) enough money to get a ā€œfreeā€ (haha) beany baby dog and two other small things. But it was fun. There were several bands/live music along the boardwalk at various "beach bars/pubs".
Had some pretty good food for lunch (shared fish and chips and salsa and chips) and dinner (DD had coconut shrimp and fries. I had a small hot dog). There was a guy doing Elvis songs at the bar area. Not to bad.
DD hit an ice cream shop for a scoop. We also got some fudge to take home.
We brought two sausage, pepper and onion subs home.
Left the house at 8:30am (shared an omelette at diner before we hit the rode) and got back home at 10pm (shared one of the subs for a snack).
It was a fun day.

More Queenies (I can’t get enough of them), salmon, pea and courgette pasta. So fresh and well cooked I even enjoyed the peas!

Might not be the best looking dishes but they were the best tasting for sure.
All washed down with a nice bottle of white and a wobble back to the hotel for a lie down! šŸ˜‚
