No pics of finished shoulder of lamb, it was all gone too quick. Nothing left coleslaw was a big hit. Quiet day on food front today, we are going to country pub for dinner tonight, sons birthday present to me and my wife. Choice was ours, we chose this one because it's kid friendly.

My mother had the idea to show me how to make a biscuit roll. It did break, but it wasn't too bad.
Chocolate biscuit, whipped cream with apricot jam and roasted, chopped almonds

I did a Salad today with Pistachio Salad Dressing.

This salad included Red and Green Romaine Lettuce, Tomato, Onion, Cucumber, Julienne Cut Canadian Bacon, Pistachio Salad Dressing and Parmesan Cheese Topping.

Nachos. I made the guacamole. Craig made the salsa and the ground beef mix, grated the cheese and put everything together. His had more meat on it, plus jalapeno slices.

OK - I've made tuilles before. My best effort was a squid ink tuille! I can see how the chilli works with that dish. Just a hint.



I have lecithin and this is how I made foams before using a stick blender. Some have worked better than others. Why does a small square container work best?

A square container disrupts the vortex and allows the bubbles to collect on a side wall whereas a round container tends to draw the bubbles back into the blender and destroys as many as it makes. Its not impossible to use a round container, many times i have had no choice but my god do you get a usable formation 10 times quicker in a square!

Usually prepared by local butchers with locally sourced lamb meat and then cooked by the local bakers (bread makers) in the neighborhood using wood ovens. I was the butcher and the baker in this case
