What did you cook or eat today? (January 2026)

I found a small cauliflower, and a packet of "cheese cuttings" in the supermarket.
For the uninitiated (which is probably everyone, because cheese in the western world comes dutifully vacuum-packed with dates stamps, etc.) much of our cheese comes in rectangular blocks; like this. You go to the delicatessen counter in the supermarket, where the dispense cheese, ham, salami, etc. and ask for 300,400,500 gms, or what ever you need, and they'll slice it for you if you want. When there's only a tiny bit left, they chop it up, put it on a styrofoam tray and sell it as cuttings. $6 a kilo instead of $13 -14, and perfect for sauces, quiches, and so on.
So I came home , boiled some spuds, then cooked the cauliflower, grated the cheese, mashed the whole lot together with loads of butter, milk and cream, and baked it for about 35 minutes until it had browned on top. With a generous serving of brussels sprouts I found in the market last week, that was lunch/dinner, about 4pm.
 
No boil stuffed shells from either Cook's Country or ATK, my version. It came out pretty good. Another small tweak or 2, and will be perfect. A simple salad before.

A cheat meal for my brunch. This will feed me two more meals. DH wouldn't try it.

And supper for us two, Ground Beef "kinda-like" Stroganoff, minus the Sour Cream for DH, of course. Very tasty.
DH is to eat only soft solid foods for the next 3 weeks after his oral surgery to heal up nicely.

that sounds wonderful. Will you be writing it up? Or have you already? and how was it?
 
Looks like we'll get 3 nights out of the Falafel Crumbles. Hubby also commented again on how nice it is. So that's a win.


I had tahini on mine (spell check refuses the word tahini making it Tahiti instead!)
Hubby had the date dressing on his. It would have been commentary, vinegarette but that's not it either
