What did you cook or eat today? (January 2026)

I took several pics of this but didn’t get a single good one! Mr SSOAP’s still very sensitive to light so it’s quite dark here at the moment!

Beans and ‘Fat Bacon’ (aka pork belly).
I tried a different method with the Fat Bacon this time. I spiced and seasoned it then sous vide’d it for 12hours, let it firm up in the fridge overnight and then sliced and fried it.
This was a better method than slow cooking because the juices stayed in the meat better and made for a much better bite, the fat was better too.
I did not however cut it and let it air dry a bit as planned so when the high water content hit the hot oil in the pan it was like a fireworks party, it popped and cracked very loudly for a loooong time. Light at arms length and stand well back or you will get injured 😂

My version of Chef Paul Prudhomme's stuffed mirliton with shrimp and crab buttercream sauce. Stuffing is trinity, mirliton, garlic and breadcrumbs. Course there's also a lot of butter and cream per the norm for Chef Paul's earlier recipes.

We used to grow those, mirliton, in Louisiana where it was too short and too cold of a season so we'd put a box over them at night with a smudge pot in there.
