What did you cook or eat today: July 2025

Remembering from discussions past, when rascal is referencing pumpkin, it’s what we in the US would call a butternut squash. I’m assuming that’s still the case here, so I want to make sure we’re all on the same page/squash.

Made a simple meal for my husband using the leftover spicy potato patties from yesterday. Too hot to cook much.
Added grilled tomatoes, bacon & eggs.
One of my egg yolks broke moving it to the plate 😪

Sunday family dinner was lamb shoulder chop casserole with 🥕 in pot. Mash spuds and roast pumpkin.
Pumpkin was the best I've had in years I've kept seeds to plant this spring.
Daughter took some pumpkin home as well.

Sounds good. Did you post the lamb shoulder chop casserole recipe?

This will last me 4 meals. I sauteed some onions, red bell pepper, shredded carrot, and red (purple) cabbage that will round it out.

ATT has been presenting me with the $120/month paperweight all day but I think they've fixed it so:

Lunch was a garden fresh, chilled, cucumber tomato salad with lots of fresh ground tri-color pepper for Morning Glory.

Only in carbonara.
Yeah, you had to mention that. 😄 With more pepper...

We went to a Spanish-style tapas bar last night called "Eclipse di Luna" (sic). Live flamenco guitarists, so there was a great atmosphere. We had patatas bravas, fried calamari, croquetas, coca de alcachofas (a "coca"is a Catalan pizza base with, this time, artichokes on top) a beetroot and goat cheese salad and a jug of Sangría.
