What is a pie shield?
Yes, it's several curved metal pieces or even 1 whole piece that you place on the edges of a pie after the pastry has cooked and is starting to get too brown on long cooking pies. I've found that by the time the pastry is getting too brown, the top of the pie is getting too brown as well, so I just lightly lay a piece of foil over the whole pie.I'm gonna guess something that covers the outer edges of the crust to keep it from burning. I've always just used foil.
Ohh I looked and they make silicone shields now.
