What did you cook or eat today (March 2020)?

March Pork Casserole from The Hamlyn all Colour Cookbook.

Was tasty, and did it with a large jacket potato, or roasticoats as my mum always calls them.

Just grabbed something out of the freezer yesterday, some leftover pasta bake and bought a garlic flatbread to go with it.
So as a penance I decided to bake a loaf, this one was a plain white bread from the Hamlyn book I've been using.

Yes, seem to have made a 100% recovery. I must admit to spending the last couple of weeks waiting to feel ill again but it does look as though I've shaken it off.
I've had the all clear from the Path lab and I have an appointment with a specialist to make sure nothing untoward was causing it.

Today I make casserole. I use salsiccia, Pancetta an loin pork, I start Soffrito, add passata cream and glass wine. Fresh Basil, Oregano and green olive. Then add tomato puree and little sundry tomato. I use leek and porcini then chopped potato. Once reduce little I add little more wine.
I used serve with Gnocchi but Ray like with English type dumpling, Ray mama show me many year ago, so I make this way now. Photo will come my hands no shake bad today.

Im in Sydney for work all week and my partner and teen son are here alone. I usually cook a dish or 2 in bulk for the freezer on weekends so there is a nice build up in there and a variety.

They are not much for cooking but partner has mastered rice and mashed potato as sides and they can use the microwave to steam frozen veg. Son has been learning now that I have made him responsible for getting dinner on the table at 7:30 pm on Fridays. (Until this past week when we couldn’t get our usual grocery order)

All this to say that this weekend I have cooked a big pot of curried sausages with loads of extra veg in the sauce, plus an aromatic beef mince and red lentil curry that is nice with a dollop of yogurt and also a pot of savoury mince.

For this evenings meal we will have a roast chicken, with gravy and lots of roasted potatoes and pumpkin plus steamed green veg.
