What did you cook or eat today (May 2025)?

My Fridge-Freezer is only 4 years so it shouldn't be packing up just yet - it's not a normal ratio of Fridge to Freezer and I'd rather not get the same brand again as I've no confidence in them. My freezer is larger than the fridge and most others on the market it's the other way around. I need a new (used) car too and I'm in the middle of decorating so it's all money, money, money right now! 🤣🤣🤣

I had leftover mashed potatoes that I turned into 4 potato pancakes yesterday and served 1 to DH with a slice of cheese, some chopped up chicken, and fried eggs on top. Today I made some sausage gravy but was too lazy to make biscuits so we had potato pancakes with fried eggs and sausage gravy on top. It was really delicious.
I don’t know what potato pancakes are to you but I think I’d actually like that more!

Gluten free so yes. I just plop the mashed potatoes in a bit of butter and/or oil as is and shape into patties with the spatula. It takes a bit of time but I like the idea of no binders.

I’ve enjoy the potato waffles I’ve made which are pretty much what you’re describing (just fried in a waffle shape by the machine) and I did think next time I’d do gravy (your gravy, the sausage and white sauce version) cos that would work well.
Not sure I’d be moving about much after though so that maybe a weekend breakfast 😂
 
Wife said being home tea do that's easy. Bacon stir fry with full bacon rashers. Yuk. Binned it. Looked around goind 2 sheets pastry in freezer.
Bacon n egg pie it is. I just finished a quarter of it. Wifes taken another quarter to work.. I'm brilliant at cooking from scratch. My stir fry tomorrow night.

What are you doing with xanthum gum? I have some in my pantry. I used it to make a nut milk pudding once.
I don't have it anymore. Late 2020 early 2021 when I was on the keto diet for a minute I used it to thicken something up. I have much less processed ingredients now. 👍

Also got some homemade toasted coconut marshmallows, homemade jellied nougats, dried apple rings, and a big piece of homemade German chocolate cake.
