My fake muller rice all potted up ready for snack / small dessert / first breakfast
Reduced the sugar, and threw in a good jolt of cinnamon and some raisins for interest.
I should try some plain ones and prep apple / blueberry compote to serve with them.

Yesterdays scallops, parma ham and a pea puree.
Not really familiar with my sons hob or weird frying pan so some of the pan seared the scallops nice n quick giving a lovely edge without cooking through too much and a section of the pan was obviously a lot colder didn’t do the do.

I took the underseared ones (in this pic). Still better underseared than overdone!

I enjoyed this so much. I couldn’t believe how lovely it was for the amount of effort.
The recipe recommended parsnip puree but I couldn’t be bothered peeling n chopping the parsnips and I wanted some colour so the pea’s had it.

I also can’t believe how nuking Parma ham worked so well, just 90 seconds between two sheets of kitchen towel and it was perfectly crispy without being burnt.

My son loved it.

So simple I thought other seafood lovers might like this recipe. I used M&S’s superduper concentrated chicken stock and a fair lump of butter for the pea puree rather than the milk n parsnips they use -

After my lunchtime beer I stayed in the same coffee shop and had this roasted meats rice:
