Yeah and it's easily a hit or miss thing. Too high heat they get too dark and have a burntish taste, too low of a heat they're too oily, cooked too long they're burnt, undercooked they're gummy. Best made to order but I've been to places that tried to make them in bigger batches ahead of time and it didn't work out well.
