They’re best purchased out of a pass-through window in the back of a dive Mom-and-Pop carry-out convenience store in some podunk town where they’ll have a little griddle set up on one table and a little card table with the fixings on another table, and you’ll get it hot and wrapped up tight in some tinfoil.
