What did you cook or eat today? (October 2025)

There are loads of Lebanese and Syrian immigrants in Venezuela; some are third generation, so we've got some great restaurants here. When we used to go out as a family (5 of us) we'd order 1 dish of hummus, babaganoush (smoked aubergine purée), labne (yoghurt), dolmades (stuffed vine leaves) little cabbage rolls stuffed with minced meat, Swiss chard leaves stuffed with minced meat, falafel,tabbouleh (cracked wheat with tomatoes, parsley, spring onions, mint) fried, or baked kibbé, lamb kebabs, and rice with lentils. A proper feast.
Sometimes I make a (reduced) version for just the 3 of us; hummus and babaganoush, falafel and fried kibbe.
With bought, or homemade pita bread.
Yeah, I absolutely get that
Lot of lebanese around here as well.
I like hummus. I would just not consider it a dipping sauce for falafel

I remember a family vacation when I was like 13 to Dollywood, and the restaurant we went to there had an all-you-can-eat catfish, and I've never had it before, so I tried it. I ate like 5 pounds of fried catfish (the cornmeal way) and hushpuppies that day and spent the entire night in the bathroom. I had the 3rd worst diarrhea of my young life, and I would do it again in a heartbeat. That was the day I learned that I loved catfish. 🤣
 
What about the chickpea flour (besan)?
Just mix with water, spices and baking powder? Let stand for a bit, then deep fry?
That at least is/was my plan after reading the ingredients on my ready mix
It'd probably work, but it wouldn't be so much a falafel, more a pakora. Nothing wrong with that and a good dose of tamarind chutney.
For me, the falafel needs some texture to it, which you get from the raw, soaked chickpeas.

Yes, catfish and hush puppies is a thing around here. Fish fries are a big deal too. We've lots of rivers, lakes, coastline so fish is plentiful. I'm fixing them broiled white fish tomorrow, enough frying already! 🫟

My mother used to make whitefish in the oven on a sheet of aluminum.
That's all I can remember. I was just a kid.
But I could always pack away a huge amount of seafood. There were just four of us, and sis always ate like a bird, but out of a whole sheet pan filled with fillets we never had any left over.
