I usually don't either. They are always too tight/dry. Don't want a soupy risotto either, rather one that oozes/spreads slowly. I don't make it often but when I do, I make it in a pressure cooker (stove top before I got my Instant pot). Seven minutes and done! Oh, I don't stir my rice. My mom taught me to bring it to a boil, cover, simmer, and turn it off. Sometimes I use my IP. Usually though I'll use my rice cooker since I can set it up whenever and walk away.
