Thanks, I used to have gas but I had to use gas bottles as I haven't got a supply to my house. I researched and decided to go with induction. Brilliant and easy to control and clean. The only downside is the induction doesn't get as hot as gas so I can't quite get the sear i'd like on steaks when using my Lodge griddle pan. Overall though I am happy.
That is a serious cook's kitchen. I love the hanging pans.

Thank you, never thought of that!A kitchen blow torch is your friend. A few seconds blasting and you get the char.

It's about space, easy to install and releases so much room.
Love your kitchen. I noticed your serving dish/ bowl that is green leaf with lobster.

Ignore that - I just spotted it to right of second photo! Now if that is the same one I think it is, its very unusual in the UK as its an American ceramic: Keeler.
I have a Searsall. It does a wonderful, even sear and there is no propane smell or taste. It attaches to a standard propane torch.
