Ingredients:
1/2 head white cabbage, shredded
1/2 head Napa/Chinese cabbage, shredded
Zest of 1 medium orange
Segments of the same orange, white pith removed
2 tbsps raisins
1/2 small red onion, finely diced
Salt and pepper
For the mayonnaise:
200 gms (about a cup) mayonnaise
2 tbsps coriander seeds, ground or 2 tbsps coriander powder
Orange zest (above)
Olive oil
Method:

2 tbsps coriander seeds, ground or 2 tbsps coriander powder

Method:
- Place the cabbage in a large bowl along with the orange segments, raisins and red onion.
- If using whole coriander seeds, toast for a few minutes before grinding. Mix the coriander, orange zest and mayonnaise together adding a little olive oil to thin the mix.
- Add the mayonnaise to the coleslaw and mix well.
