Ingredients: ( serves 2-4 people)
4 slices sandwich bread, crusts removed
2 medium courgettes/zucchini
1 ball fresh mozzarella
6 leaves fresh basil
Salt & pepper to season
1 beaten egg
1 pkt saltines or cream crackers, crushed/or breadcrumbs
Olive oil for frying
Method:

Method:
- Roll the bread as thin as possible with a rolling pin.
- Slice the courgettes/zucchini lengthwise and grill, or fry, for 2 minutes each side, until brown spots appear. Season with salt and pepper.
- Cut the mozzarella into slices and set aside for 10-15 minutes to drain.
- To assemble: place the courgettes/zucchini on one slice of bread. Cover with 3 basil leaves, then with slices of mozzarella. Place another slice of bread on top and press down gently.
- Dip the "sandwich"in beaten egg, then in the crushed saltine mix (or breadcrumbs). Set aside for a minute or so.
- Heat the oil in a pan and gently place the "sandwich" in the oil. Brown for 3-4 minutes, over medium heat, then flip over and brown the other side.
- To serve, put a little tomato sauce (marinara) on the plate, slice the sndwiches into 4 pieces and serve as a starter.
