What did you cook/eat today (February 2018)?

When I first saw Rocket mentioned on the forum I had to look it up. Arugula - use it in salads. Love the peppery bite.

It is the best bed for beef carpaccio, IMHO.

Last night I made enchiladas with a chicken, roasted poblano and cotija filling. The sauce was made with roasted poblano, roasted tomatillo, roasted onion, roasted garlic, stock from poaching the chicken and a few herbs and spices. Black beans as a side.

That looks so delicious. Lovely colours. I envy you the natural light for photography. This time of year everything has to be photographed before the light fades at 4pm.

By the way, the aloo ghobi garnish is flat leaf parsley. I didn't have any coriander.
