Do you find easily bottarga in the UK Stores (ex. Tesco)?
I just checked and none of my on-line supermarkets sell it as far as I can see. I think I bought the jar I have (its dried) from Amazon. It keeps forever when dried. Its surprising that Ocado doesn't stock it as they do tend to specialise in 'gourmet' ingredients.

I prefer the dried version in jar too. It's an highlander..

I am so pleased with this. It is for The CookingBites Cookalong: Boeuf Bourguignon or Mushroom Bourguignon. This is Mushroom Bourguignon with Chestnuts. I really didn't expect it to work so well. I will write up the process tomorrow.

I don't really worry about chemicals at my age! If it tastes good then stick with it! I'm pretty sure it must have red food colouring in it though - which ironically is derived from ants.

We still have a packet left. It wouldn't scan accurately with the powder still inside so I've had to photograph it which is just about adequate:

I drizzle a little honey over the pork prior to firing up the oven.

The colour could be derived from rhodamine but I doubt it. Probably from cochineal bugs or red ants as you say.
 
I have quite a few days to report, since I haven't mentioned any meals since we left our daughter's place. I'll try to consolidate things. Wednesday was the first day on the road, and the only night we spend while traveling from her place to ours. It was comfort food at a home style family restaurant. We each had egg-based dishes. Hubby had something they called "Bacon Hash". It was a lot of bacon pieces mixed with diced and pan-fried potato cubes, topped with two eggs to order. He didn't trust them to get the eggs right, so he ordered "well-done". I had an omelet with mushrooms, Swiss cheese, and onion...in spite of the fact that I had ordered mushrooms, Swiss, and bacon. :scratchhead: It was still tasty - and because they messed up, it was free! That made it just a little more tasty. :giggle: I also had home fries and buttermilk biscuits with my omelet, and shared the biscuits with my hubby.

Thursday late afternoon found us at our favorite diner about two hours from home. We try to stop there both on the way out on vacation, and also on the return trip. They have great home cooking, nothing fancy, but the meals are tasty, inexpensive, and very filling. I ended up taking half of my entree home! Hubby and I each had a tossed salad with red wine vinegar dressing, and cups of Italian Wedding Soup. He then had a bowl of their version of Beef Stroganoff over noodles. I had oven BBQ ribs with peas and mashed potatoes. It was all good.

Last night I cooked rolled breast of lamb with a blackcurrent sauce. The lamb had been on the go for 3 days, 24hr brining, 24hr resting/compressing I the fridge, 24hr sous vide at 56.5deg C, then browned in a hot skillet. Garlic & rosemary croquette potatoes - tasted great, but most of the filling came out in the fryer - I forgot to chill them first! Minted pea puree and parsnip chips to finish it off. Overall, tasted good so will do it again. Needed work on the presentation front though - hence no photo.
 
Friday's supper was quick and simple - grilled cheese sandwiches on fresh bakery Italian bread. We had them with bread-and-butter pickles or slices of tomato between "the sheets" along with the cheese. No pics.
 
Saturday caught me cooking in the kitchen. I made garden salads after stocking up on produce at the store. The main feature had packaged Carolina Long Grain & Wild Rice mix, along with a sauteed bacon/Brussels sprouts/scallops entree. The local stores around here sell one pound packages of broken scallop pieces for dirt cheap. When presentation isn't important, I'm fine with using the "seconds". They still taste yummy!

There was a rib outlet in Cleethorpes which I would travel to regularly from Grimsby in 1982 (only 6 km I know). They were very good but I cannot remember the name of the restaurant..
