vegan

Veganism is the practice of abstaining from the use of any product created by or obtained from any living creature.
Veganism is the practice of abstaining from the use of animal products, particularly in diet, and an associated philosophy that rejects the commodity status of animals. A follower of the diet or the philosophy is known as a vegan. Distinctions may be made between several categories of veganism. Dietary vegans refrain from consuming animal products, not only meat but also eggs, dairy products and other animal-derived substances. The term ethical vegan is often applied to those who not only follow a vegan diet but extend the philosophy into other areas of their lives, and oppose the use of animals for any purpose. Another term is environmental veganism, which refers to the avoidance of animal products on the premise that the industrial farming of animals is environmentally damaging and unsustainable. Interest in veganism increased in the 2010s, especially in the latter half. More vegan stores opened and vegan options became increasingly available in supermarkets and restaurants in many countries.

Recipe Red Onion Tart with Parsley and Parmesan

Caramelised onions have a wonderful sweet flavour which works well with the slightly fruity and nutty taste of a good Parmesan. The parsley adds a mild bitter and mineral note which brightens the flavour. This makes a great simple vegetarian lunch together with a green salad. To make it vegan...

Recipe Persian Herb, Bean and Wheat Stew (Ash-e-Sholeh-Ghalamkar)

This is one of those dishes that is not only flexible with the quantities for the ingredients, mixing and matching with whatever you've got available but looks like an awfully complicated recipe and the truth is ,it isn't . It's actually quite simple and is just a question of timing of you're...

Recipe Cream of Leek, Squash and Saffron Soup

I was on the hunt for squash based soups because the local village runs a pumpkin festival each year and in the spring give away free squash plants. We picked one up last spring and now have a lovely large squash that needs a suitable recipe. And given that the current challenge is saffron, I...

these are Margaret fultons recipe, tried and true, even though it's about 35 years old. We recently had friends over and used the last of them. These freeze perfectly. Recipe Pear, Verjuice and Saffron Butter

This is one of those strange ones I came across 4 or 5 years ago now. The use of the term butter for the preservation of fruit. I believe it's an American term rather than a British one and refers to a pureed version of the fruit that is traditionally then cooked down into a thicker pureé in an...

Recipe Cauliflower & Onion Pakoras (Indian)

These are vegan. I love them. I had to do my best to re-create them after ordering them a couple times at an Indian restaurant a little out of my way for regular visits. More local restaurants to me seem to lack this wonderful food! This recipe is also gluten-free if that is something you...

    Recipe Tabouleh

Niki Segnit - author of the flavor thesaurus - had a recipe for tabouleh that went something like this: get a bunch of parsley, and start chopping. When you're done with that, get another bunch of parsley. When you feel like your arm is about to fall off, keep on chopping. Tabouleh will always...

    Recipe Tahin Pekmez

This hardly warrants a recipe, but for completeness I've added one. Ingredients 2-3 tbsp tahini (hulled or unhulled work equally well) 1-3 tbsp grape molasses (traditionally grape molasses is used but any other molasses could be used provided it is sweet, so not pomegranate molasses)...

Recipe Moroccan Tomato, Lentil and Onion Soup

This is a lovely soup, totally different to most of my other soups in that the flavour is quite delicate and light, yet the soup is very filling. All of the spices are best freshly ground if you can. Serves 6 Ingredients 1 tbsp Olive oil 2 medium to large onions, sliced 2 stalks of celery...

    Considering going the vegetarian route!

Hello to all fellow Cooking Bites members! It's been a while and it feels good to be back. I hope everyone is well! I have been thinking about eliminating meat products from my diet (for the last year, roughly), for a number of reasons. The animal-cruelty aspect of things, the health side of...

Mudjadara* is a lovely comfort food from the Middle-East. It reminds me of Indian Kitchiri which is claimed to be the origin of British Kedgeree.
