vegan
Veganism is the practice of abstaining from the use of any product created by or obtained from any living creature.
Veganism is the practice of abstaining from the use of animal products, particularly in diet, and an associated philosophy that rejects the commodity status of animals. A follower of the diet or the philosophy is known as a vegan. Distinctions may be made between several categories of veganism. Dietary vegans refrain from consuming animal products, not only meat but also eggs, dairy products and other animal-derived substances. The term ethical vegan is often applied to those who not only follow a vegan diet but extend the philosophy into other areas of their lives, and oppose the use of animals for any purpose. Another term is environmental veganism, which refers to the avoidance of animal products on the premise that the industrial farming of animals is environmentally damaging and unsustainable. Interest in veganism increased in the 2010s, especially in the latter half. More vegan stores opened and vegan options became increasingly available in supermarkets and restaurants in many countries.
The Independent newspaper reports on the the rising trend of veganism in the UK:
With the number of vegans in the UK soaring to more than 3.5m in the past few years, following a plant-based diet has never been more trendy. Numerous brands have taken note of the rising interest in veganism and...
What do you like? Do you make your own? Prefer sorbet?
I make vegan ice cream using blitzed frozen slices of banana and sometimes adding peanut butter or topping with melted dark chocolate.
There are lots of vegan icecream available norw but tend to be very expensive but have bought a salted...
You could of course use just one type of mushrooms here if you wish but the mixed mushrooms do look more dramatic. You could also add cheese of your choice in which case I’d put it under the mushrooms so that the mushroom shapes still stand out. I love the way the individual mustard seeds are...
Stinky tofu has two major secrets. One is that the tofu becomes stinky, but it is not stinky. The second is the method of ingredients and the production steps of the seasoning juice. The production of the juice has always been the secret of the major chain stores and roadside stalls. If you can...
This is a bit of an experiment. Whatever the outcome, it is very tasty and hot out of the saucepan would make for an excellent melted red cheddar. The question that remains to be seen is how hard it sets and if it will melt again afterwards. Assuming there's any left, I'll let you know. Now...
This is lovely comforting dish. It takes some inspiration from French onion soup which classically uses beef stock and indeed, you could use a light beef stock instead of the miso & Marmite. I just wanted to keep it vegan. The tarka with nutty toasted mustard seeds and fragrant curry leaves adds...
This Indian inspired dish is a good way to use up left-over potatoes. Its spicy and nutty tasting with a whisper of heat from the mustard seeds and black pepper. The great thing is that the potatoes are good served hot as a side dish or warm/cold as a salad. Plus, its an easy and fast dish to...
This vegan dish makes a good light lunch with some crusty bread on the side. The flavours are intriguing and contrasting, using earthy Indian spices with miso and sweet & sour pomegranate molasses. Use more chilli if you want a spicier tomato sauce.
Ingredients (makes 5 to 6 involtini)

Easy as can be and low calorie, this makes a tasty vegan side dish. Cooking the shallots slowly means they caramelise and the sweet juices mingle with the tangy miso and salty soy sauce. The ginger adds a lovely heat to the dish. A wisp of toasted sesame oil added at the end adds a hint of nut...
Scalloped potatoes are very easy to make but take a rather long time to cook. To speed up cooking time you can briefly par-boil the sliced potatoes but I prefer to slow cook them from raw because I think they absorb more flavour. They make a very pretty side dish if made individually but can...
After my first failed attempt to make this, where I cooked the black rice and white rice together, I decided to make this like two separate preparations, and then mix them together at the end. The first time, I cooked everything in an Instant Pot, with the intention of making a sort of risotto...

I've made Thai coconut soups before, but always with shrimp and fish sauce. This is one removes those, and instead leans on the miso paste to provide the savoriness. The result is a very good coconut soup that is also completely vegan.
Ingredients
1 tablespoon sesame oil
2 tablespoons ginger...
we get both here, when I was in the uk someone told me you guys don't eat pumpkin or squash as its mainly a crop grown to feed to cattle etc. here in nz it a loved vegetable cooked in roasts. Or even mashed with other vegetables. I see mg just made a meal with it so it kinda puts the scrap food...
A simple salad, best made when the potatoes are still warm to allow the dressing to soak in.
Ingredients (serves 1 to 2)
5 boiled new potatoes, cut into halves (100g)
5 baby heritage toms, cut into halves
A handful of flat-leaved parsley (leaves only)
50g frozen baby broad beans
1 tbsp Extra...
Caramelised onions have a wonderful sweet flavour which works well with the slightly fruity and nutty taste of a good Parmesan. The parsley adds a mild bitter and mineral note which brightens the flavour. This makes a great simple vegetarian lunch together with a green salad. To make it vegan...
This is one of those dishes that is not only flexible with the quantities for the ingredients, mixing and matching with whatever you've got available but looks like an awfully complicated recipe and the truth is ,it isn't . It's actually quite simple and is just a question of timing of you're...
I was on the hunt for squash based soups because the local village runs a pumpkin festival each year and in the spring give away free squash plants. We picked one up last spring and now have a lovely large squash that needs a suitable recipe. And given that the current challenge is saffron, I...
these are Margaret fultons recipe, tried and true, even though it's about 35 years old. We recently had friends over and used the last of them. These freeze perfectly. It makes about 35 wee morsels. I'll put pics up as I do these. A woman that tried these said they were the best she had eaten...
