Recipe Almond Milk Dark Chocolate Pudding

This creamy, sweet, vegan, dairy-free and gluten free chocolate pudding is delicious and easy to make! My husband was amazed that it did not have real milk or eggs in it, he loved it!

Notes:

This recipe makes a deep, dark chocolate flavor. If you prefer a lighter, more milk-chocolatey flavor, use a little less cocoa powder.

Ingredients:

2 and 3/4 cups of unsweetened, unflavored almond milk
1/2 tsp salt
1/3 cup cornstarch
1 cup sugar
1/2 cup cocoa powder
1 tsp vanilla extract
1 tbsp vegan butter

Directions:

In a medium saucepan, combine dry ingredients and blend.

Add almond milk 1/2 cup at a time, stirring until well-mixed. Cook pudding on medium heat for about 7-10 minutes. If you are using the pudding for a pie, cook slightly longer to have a thicker consistency.

Remove from heat and stir in butter and vanilla extract. Put in pudding cups or in a pie crust. Chill for 1 hour. Enjoy!

Yes - almond milk really can be used in most milk based desserts. I used to make something similar when my vegan son was living here.
