Beef Broccoli
2 large servings
Ingredients:
Stir Fry Sauce:
1/4 C. Chicken Broth
1/2 Tb. Shaoxing Wine or Dry Sherry
1 Tb. Soy Sauce
1 Tb. Oyster Sauce
1/2 Tb. Sesame Oil
1 Garlic Clove, minced
1/8 tsp. White Pepper
1/2 Tb. Corn Starch
Additionally:
½ lb. Beef Steak (any kind you have), cut across the grain into thin, bite-sized pieces
1 tsp. Cornstarch
¾ Tbsp. Shaoxing Wine or Dry Sherry
¾ Tbsp. Soy Sauce
pinch of White Pepper
2 C. or 1 small bunch Broccoli (I prefer Baby Broc), washed, trimmed & cut into bite-size pieces
1 Tbsp. Oil (make sure it has a high smoking point, I like Peanut Oil)
½ small Onion, sliced from "pole-to-pole"
2-3 Garlic cloves, minced
¼ -½ tsp. grated Ginger
Optional: thinly sliced Green Onion for garnish at service, along with Sesame Seeds
Method:
1) Add all of the Sauce ingredients into a Mason jar and shake well before each use (can be kept in the `fridge for up to 1 week)
2) Add the Steak, Cornstarch, Wine & Soy Sauce to a bowl and combine well; set aside, covered
3) Allow the Steak to marinade for 10-15 minutes
4) Heat a Wok (or large pan) over medium-high heat with about ½ cup of water (you might need to add more)
5) Steam the Broccoli to a very crisp-tender; let the water cook out and then stir fry for a bit of char, set aside
6) Wipe out the pan and heat the Oil
7) Stir fry the Onion for a few moments
8) Add in the Beef and stir fry to medium-rare
9) Add in the Garlic & Ginger and stir fry until fragrant
10) Add back in the Broccoli, along with as much of the Stir Fry Sauce as you'd like
11) Stir constantly until the Sauce is thickened
Serve warm over steamed Rice, Noodles, or just by itself.
*Cook's Note: Add in any other veggies you like, Sweet Bell Peppers, shiitake Mushrooms, etc.
Any protein would work here, Chicken, Tofu, Seafood.
