Recipe Beef With Homemade Black Bean Sauce

Beef With Homemade Black Bean Sauce

SERVES 2

250 gr of Ribeye Steak, excess fat removed, sliced against the grain, ½ cm thick
(I used Top Side cut in very thin slices. If your Wok is small fry in two or even three batches in order to be sure that your Wok is very Hot)

We marinade the Beef Slices in:
½ tsp of Salt
½ tsp of White Pepper
½ tsp of Sugar
1 tbs Sesame Oil
1 tbs Dark Soy Sauce
1 tsp of Vegetable Oil
1 tsp of Potato Starch
1 tbs of Water

Mix everything in a bowl and let marinade for at least 30 minutes at room temperature

Other Ingredients:

1 medium Green Pepper, cut in about 4x4 cm pieces
1/2 medium Onion, cut in about 4x4 cm pieces
10 THIN slices of Carrot
100 ml water
1 clove of garlic, stem removed, finely chopped
½ Chili Pepper, chopped
1 full tablespoon of Black Bean Paste
2 tbs + 1 tbs Vegetable Oil
1 big Tbs of Potato Starch mixed with 2 Tbs of Water
1 tbs of Shaohsing
1 tsp of Sesame Oil
1 tsp of Dark Soy


Heat the Wok on HIGH heat.
Add 2 tbs of Vegetable Oil, give it a swirl, remove excess oil, this is to coat the Wok.
Add the beef and stir continuously for 1-2 minutes until browned.
Remove Beef and set aside.
Add 1 tbs of Vegetable Oil.
Heat it up and add Green Peppers, Onion and Carrots, stir, 30 seconds,
Add 1 tsp of Sesame Oil, Garlic and Chili Pepper, stir for 20 seconds,
Add Beef back in, stir for 40 seconds,
Add the Black Bean Sauce, stir for 20 seconds,
Add Water, stir and scrape the Wok,
Add pinches of Sugar and White Pepper,
Add Shaohsing and Dark Soy, stir for about a minute,
Add the Potato Starch mixture and stir continuously.
If mixture becomes too thick add a bit of water.
Serve with Rice or Noodles.

BLACK BEAN SAUCE

250 gr of fermented Beans.
Fish out the Ginger pieces.
Put in a bowl with cold water and stir a bit to take away the saltiness, drain and repeat.

Then we need:
2 tbs of Vegetable Oil
1 tbs of Sesame Oil
2 teaspoons suga
1 teaspoon chopped garlic, stem removed
150 ml water

Heat up the Wok on MEDIUM heat,
Add the Vegetable Oil, heat for 20 seconds,
Add the Garlic, give it a quick stir,
Add the Black Beans, stir, 20 – 30 seconds,
Add the Water,
Turn Heat Up,
Add Sugar, Sesame Oil, Give it a quick stir,
Turn Heat to Medium again,

Be patient until all the water is absorbed by the Beans.

Then put it in a bowl, cover with Vegetable Oil which will act as a preservative.

It will last in the fridge for up to six months

Do you buy your beans already fermented or starting with dry ones and ferment yourself (if so, how pls? :) )
