This is a frozen yogurt that can be used as a refreshing accompaniment to savoury or sweet dishes and easily embellished or added to depending on the dish.
Ingredients
500g/ 1lb beetroots about 3 large, cooked, peeled, pureed
40g/4 tablespoon fresh lemon juice
200g Greek style yogurt any type
40g pomegranate molasses or syrup
Instructions
Wash, top and tail the beetroot.
Boil, bake, or roast the beetroot until very tender. Peel, puree adding the lemon juice, and pass through a food mill or sieve for smoother texture if wanted.
Add the yoghurt and pomegranate molasses/syrup and blend thoroughly.
Place in container in freezer until needed.
To use, take frozen prepared beetroot out of the freezer and sit at room temperature for 10-20 minutes to soften slightly before scooping adding further flavourings and add-ins if wanted, and refreezing.
