Recipe Black-eyed Bean Salad with Chilli, Lime and Avocado

Simple, fast, versatile and delicious. I made this to go with Tequila Lime and Coriander Chicken. You could substitute other fresh salad vegetables for the red pepper and celery and add herbs such as coriander or dill.

Ingredients
1 x 400g tin black eyed beans, drained
1 avocado, diced
2 birds-eye chillies deseeded and chopped
1 lime, juice and zest
1 small red bell pepped, diced
1 stick of celery, diced
2-3 tbsp oil of your choice (I used walnut oil)
Salt to taste

Method
Mix all the ingredients together.

I'd be all over that like a rash. I must get into black eyed beans. I had a really great meal at a restaurant over Xmas with my kids at a place called the Moutere inn. I had southern fried spicy chicken with refried black eyed beans, man it was the best ever. I've since replicated the chicken part but havnt looked at the bean part of the recipe. It's a place my family went for our holidays at Xmas. About a 5 hr drive from where I'm based. Thanks for the reminder.
