Yeah. I saw that one. I must say I never came across it mixed with tahini. Its a variation though.

It does need the right seasonings and plenty of pepper. In the US our breakfast sausage is probably much different than what you have there.

I've gotten accustomed to the American omelet style of many fillings, lol. I'd probably just call a traditional omelette an egg pocket or envelope, lol. It's funny, because I do make them, I just don't call them omelettes. When I make a scrambled egg sandwich for DH, it's easier to keep the eggs from falling out it if I fold the eggs over instead of breaking them up.Occasionally I put cheese in an omelette (in which case its usually simply a cheese omelette) with cheese folded into the centre to ooze out. But mainly I cook omelettes 'au naturel' so to speak. Or with a simple filling such as spinach.
Smoked salmon and cream cheese as a sandwich filler is rather nice though.
Makes some nice starters too.

Oh dear! This is cheapest of cheap street food in Egypt!
My search engine showed them from light green going all the way to dark brown.Interesting. They are very light in colour compared to those I am familiar with.
