This is another interesting way in which rice can be prepared. This recipe was taken from "Caribbean Cookbook." I figured it would be a good recipe to enter in the Cooking Bites Recipe Challenge.

Ingredients:
2 cups rice
4 cups water
1-1/2 oz butter
1 large onion
2 teaspoons salt
1/2 cup chopped ham or salt meat
Piece red pepper
1 small red sweet pepper (sliced)
1 small green pepper (sliced)
1 tablespoon grated cheese
Chopped parsley

Method:
Wash rice and add to boiling salted water
Cook gently until rice grains are almost soft
Add butter, onion, ham and pepper
Stir gently with a fork
Cover and steam 10 minutes to finish
Serve hot with chopped parsley, sweet pepper and grated cheese

I have seen this before but I have never tried it. I'd much rather dance to the calypso. I would try this but I could do without the cheese as much as I am a cheese lover.
 
This looks like a delicious way to enjoy rice as a casserole and loads of cheese. Though I am unable to figure out what makes it calypso, the calypso I am aware of is the one you dance to!
 
Sounds like a great way to prepare rice. We eat a fair amount of rice so it is nice to have different ways of preparing it. This is something that I would definitely make.
