Recipe Chocolatey rum balls

This is a recipe that we make at Christmas every year. My brother really loves them and insists that they’re one of the things turned out at our annual early December bake-a-thon/football watching day.

Ingredients:

Around 2 cups ground walnuts or pecans
4 cups icing sugar, sifted
1/4 cup cocoa powder
8 squares bittersweet chocolate, chopped
8 squares semisweet chocolate, chopped
1/4 cup whipping cream
1/4 cup dark rum
1/4 cup coffee liqueur
Chocolate sprinkles

Method:

Grind the nuts - if you’ve got a good blender, now is the time to use it. Put the ground nuts in a bowl, and add the icing sugar and cocoa powder and mix well.
In a separate bowl, melt both types of chocolate together with the rum, coffee liqueur, and cream (I usually do this in the microwave for ease). Add to the nut mixture and mix - the mixture is a bit dry, so this takes time and effort. If you’ve got a stand mixer, this will be considerably easier. If not, recruit someone with good arm muscles.

Roll the mixture into balls and then roll the balls in the chocolate sprinkles. Store in an airtight container. Makes about 4 dozen.
