Recipe Classic Tapenade

Ingredients :
150 gms black olives (preferably Nicoise)
60 gms capers
5 cloves garlic
2 tsps black pepper
Olive oil

Method:
Stone the black olives, peel the garlic, put all the ingredients into a food processor and blend until well-mixed. The texture depends on what you prefer, smooth or "rough".

I love tapenades in general, probably because I love olives. This looks like it would be a fantastic addition to a charcuterie platter with some good bread, it might make an appearance the next time I have friends over!

I made this with Peruvian purple olives, because they were the olny ones available.
If you have a Turkish, or Middle Eastern grocery somewhere close, the selection of olives is usually magnificent. It's worth experimenting with different types.
Castelvetrano comes to mind because they're so buttery. Then there are the dried, black olives which are perfumed. And there's a "grilled" olive out there which must be great in a tapenade.
