Ginger-Honey Vinaigrette
Makes about 3/4 cup of dressing
Ingredients
1 ½ TB grated ginger, peeled and minced fine
2 TB white wine vinegar
1 TB Dijon mustard
1 TB honey (or maple syrup for vegan option)
½ cup peanut oil
¼ tsp garlic powder
½ tsp kosher salt
Directions
Place all ingredients in the cup of an immersion blender (or similarly-sized container) and blend until smooth. Will keep in the fridge for about a week, but bring to room temperature before serving.
