Recipe Grape Jelly Cream

A pretty dessert which is very easy to make. Use the best quality grapes you can find.

Ingredients (makes 2 x 100ml moulds)
225g seedless purple grapes
1/2 lime, juiced
70g sugar
60ml water
5g powdered gelatine
50 ml double cream
Method
  1. Gently simmer grapes, lemon juice, sugar and water in a saucepan for 20 mins. Use a potato masher to squash the grapes down to release their juice.
  2. Sieve the mix using the back of a large spoon to press the the pulp down. You should now have 160 ml of grape juice. If less then add some water.
  3. Return the grape juice to a clean saucepan and heat gently. Remove from heat, sprinkle gelatine over the top and whisk.
  4. Allow to cool slightly and then stir in the cream.
  5. Pour into moulds an allow to set in the fridge for an hour before turning out.
