We've all made a New York Style Cheesecake before, this time around I went with my girl Martha.
Once fully chilled continue.
1st layer - Ganache:
4 oz. Dark Chocolate
4 oz. Heavy Cream
I broke up a gorgeous bar of Dark Chocolate into a bowl and pored in the Heavy Cream that I heated in the microwave; stirred it gently to create the Ganache.
I spread it out evenly all over the top of the cake with an offset spatula and stashed it in the `fridge to set up.
2nd layer - Caramel:
10 oz. Caramel Candies (your choice of brand), unwrapped
1/4 C. Heavy Cream
I melted some Caramels with the Cream, spread that over the top.
3rd layer - Nuts
1 C. Pecans, rough chopped
While the Caramel layer is still a bit warm, sprinkle the Pecans.
Chill well before serving.
