Recipe Leeks with cream cheese & bacon

Ingredients:
4 medium leeks, washed and sliced into rounds
2 tbsps butter
6 rashers bacon, diced
100 gms (about half a packet) cream cheese
1/2 glass white wine
1 tsp salt
1 tsp green peppercorns, if available, or 1 tsp ground black pepper

Method:
  • Melt the butter in a large frying pan, then add the diced bacon. Cook the bacon gently, until crispy, then set aside.
  • In the same pan, add the leeks and simmer until soft and lightly browned. Increase the heat and add the white wine, salt and pepper.
  • When the wine has almost evaporated, add the cream cheese, lower the temperature again and stir gently until you have a creamy sauce with the leeks.
  • Sprinkle with the bacon bits and serve.

One thing I know is that leeks love wine. They also like creamy cheese. The crispy bacon is a nice counterpoint here, in terms of both texture and taste. But, oh, those green peppercorns add a piquant twist. Very good.
