Mixed Veggies & Beef Stir Fry

Serves 3-4

Ingredients:

2 Tbsp. Peanut Oil (or any neutral oil you have)
½ C. each Sliced Sweet Red (or any other color you have) Bell Peppers; Carrots; Celery; Sweet White Onions
¼ C. Green Onions, sliced and divided - white & green parts
½ lb. Flank Steak, thinly sliced across the grain
3-4 dried shiitake Mushrooms, rehydrated, de-stemmed and sliced thinly (if you have fresh Shitakes, use them)
1 clove of Garlic, minced

Stir Fry Sauce
½ C. Chicken or Vegetable Broth
1 Tbsp. Shaoxing Wine (or Dry Sherry, Bourbon or White Wine)
2 Tbsp. each Light Soy Sauce & Oyster Sauce
1 Tbsp. each Sesame Seed Oil & Dark Soy
2 cloves Garlic, minced
¼ tsp. Ground White (or Black) Pepper
2/3 Tbsp. Corn Starch

Method:

In a jar with a tight-fitting lid, combine the Stir Fry Sauce and shack well; set aside
Heat a Wok or large fry pan over medium-high (more towards the high side) heat, just until it gives off whisps of smoke.
Add the Peanut oil to heat; add in the Sweet Red Bell Peppers, stir fry for a moment
Add Carrots and do the same, followed by the Celery and then Sweet Onion and the white part of the Green Onion (we like Crisp tender veg, but you do you)
Add in the Flank Steak and stir fry until cooked rare
Stir fry in the Mushrooms until heated
Quickly stir fry in the Garlic until fragrant, followed by the Stir Fry Sauce, stirring until thickened

Serve over Rice or Noodles, either is delicious!

This recipe would work well replacing the Beef with Tofu, Tempeh, Seafood or simply just loads of different Veggies. Make it your own dish.
