Ms. Mofet's Chili

≈ 6 Servings

1 TBSP. Oil (of choice) or as needed
1 large onion, chopped
1 lb. Ground Beef
1 oz. unsweetened bakers/baking chocolate - grated or chopped fine
1 (1.25 oz. env.) chili seasoning (heat variety of choice)
1 tsp. cumin
1 TBSP. chili powder (of choice and according to your heat preference) - or to taste
3⁄4 tsp. salt - or to taste
1⁄2 tsp. pepper - or to taste
1 bell pepper (color of choice) remove seeds and veins, chopped
1 (28 oz. can) Crushed tomatoes
1 (15 oz. can) kidney beans
Cooked brown rice

Garnish:
Red Onion, diced or Scallions (white and green), sliced
Sour Cream
Shredded cheddar cheese (or cheese of choice)

Heat oil in a large saucepan over medium-high heat.
Add onion, and bell pepper and cook until softened.
Add meat and brown, breaking up with a spatula. Just till no longer pink.
Add chili seasoning mix, chili powder, cumin, salt, pepper, and completely combine.
Add grated bakers/baking chocolate, tomatoes, and beans and bring to the boil.
Offset cover, reduce heat, and simmer stirring occasionally until liquid evaporates and is your desired thickness. (I like my chili loose)
Serve over brown rice and garnish if desired.
If time allows make a day ahead, chili tastes better the next day.
