I have a from-scratch recipe also. However, with the arthritis, I make the quick and easy version. It tastes about the same as scratch.
Ms. Mofet's Easy Chicken à la king
2 - 4 TBSP. butter - as needed
1 C. Fresh or Frozen Bell Pepper (1 color or combo of choice) - diced
1 (12.5 oz. can) chicken breast - drained (reserve liquid) and shredded
1 (6.5 oz. can) mushroom pieces and stems - drained
1 (10.5 oz.) Cream of mushroom soup (Undiluted)
1/4 C. - 1/2 C. Half & Half (Or Milk) - as needed to desired thickness
Splash reserved liquid from chicken or chicken broth (additional if necessary to thin)
Salt - to taste
Ground pepper - to taste
Add butter and diced peppers to saucepan (lg. enough to hold finished recipe) and sauté till tender soft.
Stir in chicken, and mushrooms.
Add soup and stir well.
Add enough half & half (or milk) and reserved liquid from chicken (or chicken broth) to make gravy desired volume and consistency.
Salt and pepper to taste.
Simmer gently for about 5 minutes or until warmed up.
Serve over rice of choice or toast points.
