Ms. Mofet's Tomato Salad Puttanesca

4 vine ripe tomatoes, chopped
1/2 red onion, chopped
3 TBSP. capers
1/2 C. Kalamata olives, pitted and coarsely chopped
6 flat anchovy filets, chopped
1-2 garlic cloves, chopped, or to taste
1/3 C. flat leaf Italian parsley (a couple of handfuls), coarsely chopped

Extra virgin olive oil, as needed
12 to 15 fresh basil leaves, Chiffonade
Salt and black pepper to taste

Combine salad ingredients in a bowl.
Drizzle extra virgin olive oil, just enough to lightly coat the salad (≈1 to 2 TBSP.).
Add basil, salt and pepper, toss again and adjust seasonings, to your taste.
