That’s a bottom round roast (I don’t know why no one has an eye round roast), and I used detroitdad’s method of Dijon mustard, and then I just started adding stuff - rosemary, thyme, garlic powder, onion powder, paprika, and a spicy all-purpose seasoning (spicy Farm Dust) for a little kick.
It’s always sold as packs of steaks instead of a single roast here, at least at Kroger. I haven’t checked anywhere else (yet).I can always find eye round. I guess it's not a popular cut in your area.

I do my eye round like this all the time. Don’t have a meat slicer. I use a nice sharp chef knife to slice.I like this idea but I don't like the idea of getting a meat slicer, I don’t want anything sharp in my house.
